This Christmas Roast recipe is my gift to you. It’s designed to delight those who are mindful of their sugar intake without sacrificing the rich, comforting flavors we all crave during the holidays.
Imagine a tender, juicy beef rib roast seasoned with a harmony of herbs like rosemary and thyme and roasted to perfection. The aroma alone will have your family and friends gathered around the table in no time!
So, preheat your ovens and prepare to create a Christmas Roast that’s not only a feast for the stomach but also for the soul.
Ingredients:
- 1 whole beef rib roast (3-4 ribs, about 5-6 pounds)
- 4 cloves of garlic, minced
- 2 tbsp fresh rosemary, finely chopped
- 2 tbsp fresh thyme, finely chopped
- 1 tbsp sea salt
- 1 tsp freshly ground black pepper
- 2 tbsp olive oil
- 2 onions, quartered
- 4 carrots, peeled and cut into 2-inch pieces
- 3 stalks celery, cut into 2-inch pieces
- 1 cup beef broth (sugar-free)
Instructions:
- Preparation: Preheat your oven to 450°F (230°C). Allow the roast to sit at room temperature for about 30 minutes before cooking.
- Herb Mixture: In a small bowl, combine minced garlic, rosemary, thyme, salt, and black pepper. Add olive oil to make a paste.
- Season the Roast: Rub the herb mixture evenly over the surface of the beef rib roast.
- Vegetables: In a large roasting pan, scatter the onions, carrots, and celery. Place the roast on top of the vegetables, fat side up.
- Roasting: Roast the beef in the preheated oven for 20 minutes. After 20 minutes, reduce the oven temperature to 325°F (165°C) and continue roasting for about 1.5 to 2 hours. Aim for an internal temperature of 135°F (57°C) for medium-rare. Adjust cooking time for your preferred level of doneness.
- Resting: Remove the roast from the oven and tent it loosely with aluminum foil. Let it rest for about 20 minutes. This allows the juices to redistribute throughout the meat, ensuring a moist and tender roast.
- Making the Gravy: Place the roasting pan over medium heat while the roast rests and add beef broth. Scrape up any browned bits from the bottom of the pan, simmering to reduce the gravy slightly. Strain the gravy and serve it alongside the roast.
